Avocados are a wonderful healthy fat and go well in so many dishes, including smoothies and desserts. You can even use them to make a healthier chocolate pudding! This is actually a perfect way to disguise a highly nutritious food. If you have picky eaters at home or are simply looking for a way to introduce more high-quality fat into your diet, this is a great option.
The avocado, when blended with cacao or cocoa powder and a few other simple ingredients, lends a delicious creaminess to this simple dessert that can be made in the blender in just a few minutes. An important tip when making this recipe is to only use avocados that are perfectly ripe. Unripe avocados won’t give a silky texture when blended, and overripe avocados (those with bruises or brown spots), will taste off in this recipe.
How to manage avocados after you buy them:
When you buy avocados, purchase them when they are lighter green and quite hard. Put them in a paper bag or simply place on the counter for a few days. After they turn a really dark color and feel softer, immediately put them in the fridge and they will keep for up to two weeks. Make sure to handle them carefully because they can bruise easily and then they are not as good.
The link below is not only a great avocado chocolate pudding recipe, it also provides different variations on the basic recipe, including coconut, Mexican, nut butter and mint chocolate! You can make it keto, or use other sweeteners such as dates or maple syrup.
