Low-Carb Eggnog: A Holiday Treat!

I have always loved eggnog because it is such a comforting, nostalgic drink. Unfortunately, it is loaded with sugar! An easy way to transform this classic drink into a keto-friendly treat is simply to use a sugar substitute. There are many varieties of eggnog, some calling for raw eggs, and some which specify to cook them first. I spoke about eggs and the food safety issues related to raw eggs specifically, in the recipe I posted for Keto ice cream. I emphasized the importance of a safe, fresh, and reliable source for eggs if you plan to use them in recipes without cooking. If you do not have such a source, it is important to cook them first. There are many internet recipes for eggnog with tempered (cooked) eggs, but it is not as quick or basic as the recipe below.

I raise my own laying hens, so I am assured of the quality of the eggs they produce and have no safety issues consuming them raw. The recipe that follows is quite simple, with only a few ingredients (pictured below), just eggs, heavy cream, sweetener, vanilla and grated nutmeg. You can easily substitute the non-dairy milk of your choice. I also use nutmeg that I grate myself. I have had the nutmeg seed/pods for several years and they are still fresh.

My quick recipe was:

4 eggs

Half a can of full-fat coconut milk

1/3 c of heavy whipping cream

A splash of vanilla (I don’t measure)

Whole Earth sweetener to taste (I started with 2 TBSP and added about another TBSP.

Grated nutmeg to taste, and more to garnish

I combined all the ingredients in a small, one-serving blender which I’ve had for years (but any blender will work just fine). After everything was well combined and frothy, I added a sprinkle of nutmeg, and topped it with a little more when I poured it into my serving glass. It was not exactly the same as the store-bought eggnog, but it thoroughly satisfied my craving!

I often take a personal blender with me when I travel to see my kids. Not only was it great for eggnog, it is easily portable. I love it when I want to make bullet coffee, blend flax seeds into dairy-free milk, and make tasty shakes and other healthier drinks or smoothies both at home and on the road.
